Easy Fresh Healthy Veggie Pasta Salad

Serving Size: 6-8 depending on the portions


1 box of veggie pasta (or regular pasta)

1 large peeled cucumber

3 tomatoes ( I used Roma tomatoes this time)

3 Hard-boiled eggs

1 can of chopped olives (easier to buy a can of already chopped)

1 can of Artichoke Heart quarters

1 cup of any Italian salad dressing ( I went with the light Italian dressing)

1 large mixing bowl

Step 1.

Boil pasta  in large pasta pot and boil eggs (separately)



While pasta and eggs are boiling, chop up the cucumber & tomatoes and set aside in large mixing bowl.


Step 2.

Drain pasta and rinse with cold water until noodles are cool and poor back into pot


Drain the now hard boiled eggs, peel and chop and place in the large mixing bowl that has the other ingredients in it.

 Step 3.

Add artichoke heart quarters & chopped olives to the large mixing bowl.

Step 4.

Add the contents of the large mixing bowl into pot with the cooled off drained pasta


 Step 5.

Add 1 cup of the Italian dressing and mix everything together.


You may use salt and pepper to taste

Tadaaaaaaa wonderful healthy pasta salad! You may add any veggies you like. It is also great with red onion!!
